Black Bean, Red Bell Pepper, and Onion Salad
YIELD: 4 Servings
INGREDIENTS
- 3 cups black beans, canned, drained
- 1/4 cup red bell pepper, stemmed, seeded and cut in 1/4″ dice
- 2-3 tbsp. red onion, peeled and cut in 1/4″ dice
- 1/4 cup Italian dressing
- Salt to taste
- Pepper to taste
DIRECTIONS
- Place the black beans in a bowl and chill in refrigerator for 30 minutes.
- Add red bell peppers and onions and toss to combine.
- Add the Italian dressing and toss – taste and add more dressing if needed.
- Season to taste with the salt and pepper – if needed.
- Cover the black bean salad and refrigerate until serving.
