Black Bean, Red Bell Pepper and Onion Salad

YIELD: 4 Servings 

INGREDIENTS:

  • 3 cups  black beans, canned, drained
  • 1/4 cup red bell pepper, stemmed, seeded and cut in 1/4″ dice
  • 2-3 tbsp. red onion, peeled and cut in 1/4″ dice
  • 1/4 cup Italian dressing
  • Salt to taste
  • Pepper to taste

DIRECTIONS:

  1. Place the black beans in a bowl and chill in refrigerator for 30 minutes.
  2. Add red bell peppers and onions and toss to combine.
  3. Add the Italian dressing and toss – taste and add more dressing if needed.
  4. Season to taste with the salt and pepper – if needed.
  5. Cover the black bean salad and refrigerate until serving.
